Ramen shops in Japan
Ramen is a soup that is prepared in so many variations, the recipes are countless and vary greatly from area to area; the basic ingredients include broth (meat or fish, with miso or soy), noodles, meat and vegetables, just to simplify things.
A trip to Japan without tasting ramen would not be complete: where to go to eat it?
The first answer, which may come as a surprise, but believe me it really is, applies to all big cities: near stations, or even in the stations themselves. The little restaurants around the stations are the ones that offer the best value for money, and above all are the most authentic; they are frequented by the so-called 'sarariman', i.e. the office workers ('salary man'), who come out of the office in the evening and stop to eat a bowl before going home, or before going back to work again, for a few hours.
